Before becoming a pastry goddess, Emily dabbled in many things. None of them stuck, but while attending university on the island she fell in love with Victoria and all it had to offer. After enrolling in a culinary program on a whim she was fortunate to get a work placement at Murchie’s in downtown Victoria. Jacques, the amazingly talented and experienced chef there, was generous with his time and knowledge and instilled a huge love of all things pastry. He eventually convinced her to go way out of her comfort zone and get a job in Paris, where she experienced hot-tempered chefs, crazy long work days and some of the best pastries in the world.
After coming home, she returned to work at Murchie’s, dreaming of the day when she could open her own place. After meeting and befriending the lovely Rebecca, it turned out that their partnership would result in La Roux, a perfect combination of their unique talents and collective dreams.
Rebecca moved to Victoria in 2014, trading a successful legal career in Calgary for something completely different. Some people thought she was crazy, but she found she loved the energy of this beautiful city and the new and wonderful people she was meeting every day. One of these people was Emily, who hired her as a barista at Murchie’s. She knew soon after meeting her (about 30 seconds) that the two of them would make perfect business partners (and great friends!).
Two years later, the idea for La Roux Patisserie Inc. finally realized, Rebecca still loves nothing more than meeting people and making new friends every day. She treats every guest at La Roux as if they had been invited into her home and always has time for a chat. Life is full of reasons to celebrate and she would love to make it even sweeter.
