My name is Lynn (Halim) Choi and I am the Head Pastry Chef of La Roux. Prior to coming to the beautiful City of Victoria, I studied French Pastry at Le Cordon Bleu in Australia. I have worked as a pastry chef in my home country of South Korea, in sunny Australia and now Canada. I am happy to be taking charge of the La Roux kitchen and my fantastic team.
My name is Daphne Bingley, and I’ve had a passion for cooking for as long as I can remember. Although I was born in Nova Scotia, I’ve lived in Alberta and all-over Southern BC. I finally moved to Victoria in late 2017 with the hope of working with La Roux. Just over a year later, here we are making my dreams come true.
